Position Overview : The Food and Beverage Manager is responsible for the direction and management of the Black Iron Kitchen and Bar, Timber Room, In Room Dining and Alpine Swim Club in accordance with the Madeline Hotel and Residences Standards. This person will direct, implement and maintain a service standard and management philosophy which serves as a guide to respective team members. They are responsible for all facets of their areas including and not limited to revenue achievement, cost control, payroll management, purchasing and receiving, budgeting, forecasting, team development, maintaining standards, payroll, inventory management and supporting all other departments of the hotel. This person will work with the Director of Operations, Director of Restaurants and Executive Chef for menu training and knowledge, sequence of service between F&B and Culinary team, and overall flow of the restaurant operations.
DUTIES AND RESPONSIBILITIES: The Senior Food and Beverage Manager will serve as the senior manager on duty during service in any of the outlets as needed. This leadership position will ensure impeccable grooming standards, uncompromising levels of cleanliness, a well maintained dining and service facility, and ensure that service is accurate and timely in accordance with both ARC and Forbes five star standards at the resort.
This role is responsible for timely and accurate payroll processing, forecasting, budgeting, inventory procedures and timely and accurate end of shift reports to hotel leadership. Intimate knowledge of MICROS Symphony is a prerequisite as is the maintenance of those systems to ensure an updated POS is in place at all times that matches the current menu versions and pricing.
This role has a large focus on training and development. At any given time there will be several hourly line staff, interns, manager development program trainees, supervisors, assistant manager and managers in need of constant training and development to maximize their performance and productivity as well as ensure compliance with grooming, service, food safety, beverage safety, and other standards. The Senior F&B leader will collaborate with Talent & Culture to set the seasonal training plans to ensure compliance with ARC standards and ensure an engaging workplace fostering growth and development that enriches the lives of our staff members and grooms them for future leadership roles at Madeline and within ARC.
This role serves to ensure compliance with all ARC policies and procedures, including, but not limited to performance reviews, training compliance, progressive disciplinary action, annual ARC training and certification, food handlers safety and alcohol safety.
This role is a key liaison for food and beverage to the other operating departments within the property. The Senior F&B manager works closely with guest services, housekeeping, spa, engineering, events and experiences to ensure a cohesive and uniform approach to delivering excellence. Frequent and timely communication of events, programming and food and beverage department impact on the wholistic hotel operation is generally lead and championed by the Senior Food and Beverage Manager.
QUALIFICATION REQUIREMENTS: Required: Ability to satisfactorily communicate in English with guests, management, and coworkers to their understanding. Desirable: Bachelor's degree, preferably in Hospitality Management or Business Management, or equivalent 5 years experience in food and beverage management, including casual, fine-dining, quick service and al fresco concepts
Strong training and compliance background, with an emphasis on food and beverage subject matter.
Strong knowledge of wine, spirits and beer.
Strong knowledge of the inner workings of hotel operations.
SKILLS, ATTITUDES, AND BEHAVIORS: Personal Skills: Ability to deliver exemplary, world class service standards and diffuse and resolve guest and employee issues as they may arise with diplomacy, tact and professionalism. PHYSICAL DEMANDS: Ability to lift 30 lbs with frequency and ability to withstand extended periods of active floor work and presence within the operation.
