SUMMARY: The primary purpose of this position is to assist in the daily operations. Oversee Banquet functions and the Dining Areas, Banquet Areas, and all surrounding areas. Guests receive the highest level of service set by the resort. Must be willing and able to work various/multiple outlets and shifts within the Food and Beverage Division.
EDUCATION and EXPERIENCE: Associate Degree and a minimum of three years related experience; or equivalent combination of education and experience.
ESSENTIAL DUTIES AND RESPONSIBILITIES: Oversee the operations of the dining room and bar (Floor Presence).Ensure Member/Guest satisfaction in their dining experience.Ensure all Employees are trained in accordance with Pinehurst standards.Check the Dining Room, Bar, Outside, Banquet areas before and after service for cleanliness, maintenance needs, and proper set-up.Ensure rooms are properly set for all meal periods.Prepare server-side work and stations; check for completion before and after service.Complete paperwork promptly (i.e., deposits, tips sheets, forecasts, cover counts, and schedules).Maintain inventory of liquor, beer, wine, sundries, and food products sold.Conduct daily line-ups, service training, and Safety Training.Perform bartending, serving, and expediting duties.Participate in the performance review process for all dining outlet Employees.Participate in the disciplinary counseling for all dining outlet Employees.Ensure proper supplies are on hand at all times to effectively service the guest.Ensure Standards of Operation and company policies are followed.Ensure that all Products are purchased, requisitioned, and inventoried properly in EATEC.Maintain Health Standards.Ensure that all of the department's allocate the service stations for meal periods.Responsible for handling all guest concerns that arise in dining outlets.Responsible for the development of staff in dining outlets (busser to server, etc.).Responsible for ensuring all reports are completed in a timely manner, i.e., menus scores, special events summaries, maintenance walkthrough.Assume total accountability for all dining areas.Complete weekly schedule on Saturday.Check resumes daily to ensure group dining arrangements are properly accommodated and assign work stations. Pre-assign tables for larger reservations. Prepare tip sheets, morning charts, and meal check out.Greet and seat guests, monitor the consistent use of the standards of service for the patio.Proficient with Info Genesis and required paperwork.Familiar with pertinent ABC laws.Assist with Period End inventory and respond to P&L statement.Be available to work in various locations of Food and Beverage outlets depending on business levels. Work holidays as needed even if your primary outlet is closed.SUPERVISORY RESPONSIBILITIES: Manages hourly staff, a total of 10-30 Employees. Responsible for the overall direction, coordination, and evaluation of Brewery. Directly supervises various non-supervisory employees. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems both front and heart of the house. Expected to work holidays as needed even if your primary outlet is closed.
LANGUAGE SKILLS: Ability to read, analyze, and interpret general business periodicals, professional journals, technical procedures, or governmental regulations. Ability to write reports, business correspondence, and procedure manuals. Ability to effectively present information and respond to questions from groups of managers, clients, customers, and the general public.
MATHEMATICAL SKILLS: Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.
REASONING ABILITY: Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.
