Qualifications Must be able to communicate in English, bilingual is a plus
Bachelor's degree or equivalent
3 to 5 years of experience in Food and Beverage environment
Must be able to obtain and maintain a Tribal Gaming License
Working knowledge PC skills including MS Word and Excel
Maintain physical stamina and proper mental attitude while dealing effectively with guests, management, team members, and outside contacts while working under pressure and meeting deadlines
Must be able to frequently move freely about the property, maintain manual dexterity to operate job related equipment, such as telephones, copiers, etc., withstand various activities such as frequent walking, and withstand prolonged standing, stretching, bending and kneeling without restriction
Must be able to work different shifts, which may include holidays and weekends
Be able to work indoors and be exposed to various environmental contaminants including smoke
Ability to lift or carry a minimum of 20 pounds unassisted in the performance of specific tasks assigned
Must be able to work with others, communicate well, give direction, review the work of others, and provide guidance and counsel when needed to achieve department goals and objectives
Must maintain a positive attitude toward work and interface with hotel guests in a congenial and polite manner
Must be able to address stressful situations with clients with dignity and the utmost tact and politeness
Must be able to touch and handle supplies in a safe and non-hazardous manner, maintaining proper hygiene, cleanliness, and disposal methods
Responsibilities The primary responsibility of the F&B Director will be responsible for the overall organization and direction of the entire Food & Beverage operation including culinary, stewarding, restaurants, bars, and banquets.
The Director of Food and Beverage ensures that all operations of F&B are productive, efficient, and effective.
Responsible for directing the overall operations and staff of the Food & Beverage departmentDevelops, implements and manages operational goals and monitors achievements of performance and profit objectivesEnsure that scheduling is done in an effective and efficient manner, while maintaining labor costs, meeting staffing objectives and achieving guest satisfactionResponsible for preparing, monitoring, and adhering to budgets and ensuring compliance to departmental budget initiativesEnthusiastically supports, actively promotes, and demonstrates superior customer service in accordance with department and company standards and programsEnsures that the receiving, holding and issuance of products are within the quality and control standardsTie operational challenges to strategic direction and the ability to be effective in a large organizationDesigns and engineers menus for all food and beverage outletsImplements and audits inventory and cost control systems and proceduresEnsures all safety and sanitation policies are followed in accordance to local, state and federal guidelinesResponsible for ensuring the compliance with all regulatory compliance within area of responsibility and reporting potential issues to GMMaintains strict confidentiality in all departmental and company mattersResponsible for staff development and training programsResponsible for rewards and recognition program to maximize employee engagementEvaluates team members within department and delivers constructive feedback to employees in regards to performanceDetermines recommendation for staffing (including interviewing and hiring) and scheduling (planning, assigning and directing work) to meet business needsDetermines work procedures and expedites workflowResponsible for employee performance (disciplining, coaching, counseling)
