Job Summary: Responsible for all food and pastry production, including that sold in restaurants, banquet functions, and other outlets. Develop menus, food purchase specifications, and recipes. Supervises and develops all staff. Develop and monitor food and labor budgets for the department. Maintain the highest professional food quality and sanitation standards.
Essential Functions:
Leadership: Develops Sous Chefs, Line Cooks, and all other culinary staff to their maximum potential Hires and retains top talent for all culinary positions. Teaches food knowledge to the front of house staff. Scheduling and payroll for all culinary staff. Promotes a positive kitchen culture Creativity. Maintains up to date knowledge of products, techniques, and industry trends. Has a passion for creating and producing world-class food items. Makes best in class plate and buffet presentations. Fosters creativity among all Food & Beverage staff.
Menu Development & Food Quality: Develops best in class menus for all F&B outlets. Maintains up to date recipe books and plating guides. Maintains the highest quality standards for all food produced. Listens to and implements feedback from members of the club. Ensure that all products received are of the highest quality.
Safety & Sanitation: Maintains best in class kitchen cleanliness Ensures that all staff are exceeding sanitation guidelines. In coordination with SMC Engineering department, keeps all equipment in proper working order. Maintains organization and cleanliness on loading dock and all storage areas.
Other Functions: Periodically visits dining area to welcome members.
Physical Demands and Work Environment: Required to stand for long periods and walk, climb stairs, balance, stoop, kneel, crouch, bend stretch and twist or reach. Push, pull or lift up to 50 pounds. Continuous repetitive motions. Work in hot, humid and noisy environment.
Qualifications:
Education and/or Experience: Bachelor's degree in Culinary Arts and/other. Hospitality Management degree preferred. Food production and management experience.
Licenses and Special Requirements: Certification from American Culinary Association or other professional hospitality associations. Food safety certification.
