SUMMARY: The general purpose of the Executive Steward position is to maintain the sanitation and safety of the Pinehurst Country Club Culinary Operations to the standards of Pinehurst Resort and Country Club. This includes maintaining the china, glass, and silver inventory for Pinehurst Country Club.
EDUCATION and/or EXPERIENCE: High school diploma or general education degree (GED) required and a minimum of three years related experience; or an equivalent combination of education and experience. SERVSAFE training and certification are required.
ESSENTIAL DUTIES AND RESPONSIBILITIES: This position involves driving a company vehicle. A valid driver's license is required, along with successful completion of a pre-employment Motor Vehicle Report (MVR) and annual MVRs.Interview, hire, and train all Stewarding employees.Schedule employees according to weekly forecasts and maintain budgeted payroll percentages.Implement and enforce approved Stewarding Cleaning Schedule to ensure that all kitchens are maintained in a safe and sanitary environment. State Health Inspections should be maintained at a minimum of 97%.Ensure that the Pest Elimination Program is achieving the desired results and is monitored monthly.Maintain par stocks on all china, glass, silver, and cooking small wares. Conduct and share Quarterly physical counts.Supply Pinehurst Country Club kitchens, dining rooms, and banquet rooms with necessary supplies and equipment needed for daily operation and special events.Conduct monthly walkthroughs of each kitchen facility with the Executive Chef. Document any areas of concern and develop action plans to correct.Conduct employee meetings to include safety, job training, and resort knowledge.Develop and implement Preventative Maintenance Schedules for all kitchen equipment.Develop par stock on all cleaning products and maintain them according to seasonal business demands.Ensure that all employee-related documents are current.Take necessary steps to become SERVSAFE-Trained and implement the SERVSAFE Program to all Culinary and Stewarding employees.Ensure that all Banquet responsibilities are adhered to.Recognize employees who have shown exceptional performance on a regular basis.Establish and maintain an effective night cleaning program.Monitor the safety hazards of all kitchen work areas and bring areas of concern to the attention of the Executive Chef.Perform other duties as assigned.SUPERVISORY RESPONSIBILITIES: Will lead the efforts of the Stewarding Operation and is responsible for the overall direction, coordination, and evaluation of the Stewarding Department.
