MINIMUM QUALIFICATIONS: Must be credentialed as a Certified Dietary Manager (CDM) or Registered Dietitian Minimum of four (4) years of management experience in food service plus minimum one (1) year of experience supervising food service operations and staff Computer proficiency Must be willing to work weekends and holidays as required. Must be willing and able to communicate effectively in English: speaking, reading, writing and understanding. Must possess excellent customer service and interpersonal skills. Willingness and ability to create and communicate menus suitable for a geriatric population Must successfully complete the background screening process to incude, but not limited to a drug test and finger printing.
PREFERRED QUALIFICATIONS: Employment experience in a long-term care facility with a geriatric population Food service experience in a cafeteria-style setting Electronic dietary tracking experience Food production, food purchasing, and inventory experience POSITION DESCRIPTION:
The incumbent will work under the supervision of the Administrator and will plan and direct the facility food Service and staff to ensure sanitary, safe, nutritious and cost-effective meals and snacks for residents with needs for therapeutic meals are met that reflect likes and dislikes.
Maintain all phases of food purchasing, storage, preparation, production control, merchandising, service, and inventory control and ensure the functioning of the dietary department in accordance with Federal and State Statutes and Regulations.
Will attend Care Plan meetings and complete MDS.
Manage a staff of Food Production and Services Supervisor, Food Support Workers, Support Service Aides, and others assigned to work in the Food preparation activities of the Home.
Plan all work schedules so that workloads, special functions and events are covered and maximum use of staff and time are utilized.
Train staff in performing their duties in an efficient manner.
Motivate employees to obtain their maximum quality and quantity of work.
Interact with residents of the Home to address areas of concern and to maintain a positive image.
Initiate all purchase requests for food and other kitchen supplies.
Maintain inventory control.
Maintain food production control.
Verify incoming shipments.
Maintain necessary cost analysis paperwork and ensure the entire department is functional within budgetary guidelines.
Ensure safety and sanitation procedures in the preparation and serving of food and in the use and cleaning of food production equipment.
Train staff in proper sanitation and preparation techniques.
Oversee proper use, care and maintenance of all kitchen equipment.
Evaluate employees, present performance standards and evaluations.
Hire and discipline all Food Service Employees.
Oversee training of all new food service employees.
Present in-service instruction on needed topics.
Consult with the Dietitian regarding menus, policies and procedures, in-service, clinical nutrition concerns, Total Quality Leadership concerns, compliance with all state and federal regulations and any other areas of concern.
Develops policy and procedures to manage the food service department, and trains staff.
Perform other related duties as required.
This is a Selected Exempt Service (SES) class position reporting directly to the Nursing Home Administrator.
