· Coordinates the execution of production schedule based on sales requirements and plant capacity.
· Directs, coordinates, and manages production activities.
· Manage all aspects of production; personnel safety, food quality and reporting of key metrics.
· Responsible for production staffing.
· Follow all plant operations in compliance with the Food Safety and Quality procedures and policies.
· Train, and evaluate production personnel.
Ensure proper supervision, coaching and discipline.
· Oversee employees' productivity, with a focus on retention.
· Participate in management, safety, quality management meetings and inspections.
· Correct and address any production related deficiencies.
· Develop and recommend supervisory candidates
· Oversee and ensure product quality.
· Hands on management, continually walk the production floor.
· Review and approve recommendations of subordinates in personnel matters to hire, promote, transfer, and terminate.
· Coordinate disciplinary action with Human resources.
· Constantly inspects operation following production and safety standards.
Skill Set/ Qualification Requirements: · 5-year minimum of management experience in Bakery food manufacturing
· Strong understanding of Bakery equipment in all production areas in terms of set-up, breakdown and sanitation.
· Ability to oversee 70-100 employees in a fast-paced environment.
· Attention to detail.
· Ability to follow company guidelines for quality, shrink control, inventory and margin management.
· Ability to operate proof box, oven, mixers etc.
· Strong trainer with the ability to teach and hold employee accountability.
· Must be able to adhere to the company's strict sanitation program.
· Strong interpersonal and communications skills involving a diverse workforce.
· Must have familiarity with both HACCP and SQF standards.
· Must have basic understanding of Quality and Sanitation in a food grade environment.
· Must have knowledge in the specialized bakery production field.
· A high level of analytical ability is required in order to find solutions to difficult human, technical or administration problems.
