The Bellevue Club is seeking a dedicated and experienced Sous Chef to join our Food and Beverage team.
This is a full-time, working position.
Must have experience in large hotel, banquets or free-standing restaurant.
Previous experience leading a large crew with multiple outlets preferred.


Shift: AM Sous Chef- 6am-4pm- 5 days a week

Sous Chef duties will include, but are not limited to the following: Supervise the planning, preparation, and presentation of all menu items in the main kitchen, Splash kitchen, Polaris restaurant, Splash restaurant, Luna to-go food, Room Service and Banquets.
Participate with the Executive Chef to determine weekly specials based on seasonal food concept ideas. Make recommendations to the Executive Chef regarding recruiting, interviewing, hiring, and training new staff, as well as supervising and evaluating all Kitchen staff.
Provide guidance to employees concerning substandard performance, including the development of performance improvement plans and when necessary, termination counseling. Review and approve all payroll information for the kitchen personnel and completes necessary paperwork to staff the department. Ensure that all Kitchen staff maintain current skills to effectively prepare and present food items.
Provide training to continually improve these skills in order to consistently update and improve the food product quality. Effectively schedule staff to operate the Kitchen during its scheduled business hours, seven days a week. Order, receive and inspect specific kitchen items, such as dry goods, frozen goods and poultry.
Inventory all kitchen supplies and equipment as well as monitor daily banquet contracts prior to ordering to ensure proper items are ordered in a timely basis. Monitor all Polaris, Splash, Luna & banquet meal production in conjunction with the Executive Chef.
Review daily banquet contracts, verify the guest counts for various menu items, and monitor preparation and finishing work to ensure proper timing of banquet service. Monitor the production of all bulk items used in both kitchens, such as dressings and marinades, stocks, soups, etc. Perform the duties of the Line Cook and Prep Cook positions as necessary during periods of high volume or employee absences. Ensure high food quality by testing foods through sight, smell, and taste.
